火雞即吐綬雞(Turkkey)，又稱七面雞，本為野生，現(xiàn)已馴化為肉用家禽。全身被黑、白、深黃等色羽毛。頭、頸上部裸露，有紅珊瑚狀皮瘤，喉下有肉垂，顏色由紅到紫，可以變化。公火雞尾羽可展開(kāi)呈扇形，胸前一束毛球，母火雞重為8-9千克，年產(chǎn)火雞蛋50-80枚，每枚蛋重20-80克。目前飼養(yǎng)品種以“青銅火雞”和“白色火雞”為多。
